There is a need for research in food preferences of target groups in the health sector. Think about elderly people in healthcare organizations, people whose taste preferences have changed because of medical treatments and effected their ability to taste like anosmia (being unable to smell).
The reason for this is to increase the quality of life for these individuals. Good food has everything to do with quality of life, not just because you want everyone to enjoy food, but mainly because of its relationship with health. It is also necessary because poor diet leads to malnutrition (a common problem in health care) and all kinds of diseases, such as diabetes type 2. More and more it appears that diseases that were long considered chronic, can indeed be cured by changing a person’s diet. Good nutrition heals!
